Ingredients
1 sweetheart cabbage
60g Alpine cheese (such as Gruyère)
30g walnuts
150g yoghurt
2 tbsp olive oil
1 clove of garlic
½ lemon
1 tsp caraway seeds
½ tsp salt
Method
You’ll need: air fryer · chopping board · knife
Cut the sweetheart cabbage lengthways into four wedges so that the core holds the leaves together.
Brush the cut sides with olive oil and season with the caraway and salt.
Place the wedges cut side down in the basket and cook at 190 °C for 15 minutes without preheating, turning after 8 minutes.
Sprinkle over the grated Alpine cheese and chopped walnuts and cook everything for another 3 minutes.
Stir the yoghurt with the crushed garlic, lemon juice and a pinch of salt and serve it with the sweetheart cabbage.
Good to know
Cabbage as a main course? In the air fryer, the edges of the leaves go brown and almost crisp while the inside stays juicy. Alpine cheese and walnuts turn it into a proper lunch.
A sweetheart cabbage of about 600 g fits in a basket of 5 litres or more; if it's bigger, cook the wedges in two batches. Leave the core on, otherwise the wedges fall apart.
Storage
Keeps for 2 days in the fridge; reheat in the air fryer for 4 minutes at 180 °C.
Allergens
Contains milk and walnuts (tree nuts); suitable for children and fine in pregnancy.
