Ingredients

Method

You’ll need: oven · stick blender · chopping board · knife

  1. Warm the oat milk until lukewarm and dissolve the yeast and half the maple syrup in it. Melt the coconut oil.
  2. Knead the spelt flour, salt, yeast milk and three-quarters of the coconut oil for 5 minutes into a smooth dough. Cover and leave to rise for 60 minutes.
  3. Blend the dates with the warm water, the rest of the maple syrup and the cinnamon into a paste, and stir in the ground hazelnuts.
  4. Divide the dough into four pieces and roll each into a 28 cm circle. Stack the circles on baking paper, spreading every layer except the top one with filling.
  5. Place a glass in the centre and cut the edge into 16 strips. Twist pairs of strips twice away from each other, press the ends together into points and leave the star to rise for 15 minutes.
  6. Brush it with the remaining coconut oil and bake in a preheated oven at 180 °C (160 °C fan) for 20 to 22 minutes until golden brown. Serve lukewarm for tearing and sharing.

Good to know

A yeasted star looks like it came from the bakery, but it's really just folded and twisted. At the breakfast table, everyone tears off their own point.

Swaps

Hazelnuts → almonds. Dates → dried figs. Oat milk → milk (no longer vegan). Coconut oil → butter (no longer vegan).

Cooking tips

Roll out the dough circles on baking paper, then you can slide the star straight onto the baking tray. The glass in the middle keeps the centre intact while you cut.

Best on the day it's baked; keeps for 2 months in the freezer.

Allergens

Contains gluten (spelt, and oats in the oat milk) and hazelnuts; no milk or egg, suitable for children.
