Ingredients
1 large unwaxed lemon (juice)
1 small pomegranate
100 g genuine Canadian black wild rice (not a blend!)
Rinse the black wild rice thoroughly and cook it in plenty of water until the grains have burst open and are pleasantly al dente. Drain and leave to cool slightly.
Meanwhile, deseed the pomegranate, finely chop the flat-leaf parsley and roughly chop the pecans. Squeeze the lemon.
Whisk the lemon juice, olive oil, salt, freshly ground pepper and a pinch of Ceylon cinnamon into a dressing. Season well.
Put the wild rice in a bowl with the pomegranate seeds, parsley and pecans. Pour over the dressing and toss everything together loosely.
Leave the salad to stand briefly so the flavours come together. Before serving, finish with a little more lemon juice, salt and pepper if needed.
Spoon into bowls and serve fresh. If you like, finish with a little extra parsley and a few pomegranate seeds.
Good to know
This salad is special in an understated way: fresh, nutty and pleasantly tart. It suits warm days just as well as a relaxed dinner table.
Contains tree nuts (pecans); for children, only serve them finely chopped. Fine in pregnancy in normal kitchen amounts, as long as all the ingredients are fresh and well washed.
