Ingredients

Method

You’ll need: frying pan · mixing bowl · spatula

  1. Wash the blueberries and pat them dry. Heat a frying pan with a little coconut oil over a medium heat.
  2. Stir the oat milk with the apple cider vinegar and leave it to stand briefly. In a bowl, mix the wholemeal flour, baking powder, bicarbonate of soda and salt.
  3. Add the maple syrup and vanilla extract to the oat milk and stir into the dry ingredients. Mix only briefly so the batter stays light.
  4. Carefully fold in the blueberries. Add the batter to the pan in portions and cook until small bubbles appear.
  5. Flip the pancakes and cook the second side until golden brown. Add a little more coconut oil to the pan if needed.
  6. Serve warm, topped with more maple syrup and a few fresh blueberries, if you like.

Good to know

These pancakes are easy, soft and pleasantly filling. Just right when you want breakfast to be warm and sweet but still down to earth.

Swaps

Oat milk → unsweetened almond milk (often a little thinner) | Wholemeal flour → wholemeal spelt flour (often slightly milder in flavour) | Maple syrup → date paste (adds a little fibre as well) | Coconut oil → olive oil or avocado oil (more monounsaturated fatty acids)

Allergens

Contains gluten if you use wheat or spelt flour; check that the oat milk is labelled gluten-free if you need it to be. Usually well suited to children; during pregnancy make sure the blueberries are well washed and the ingredients fresh.
