  3. Add the cabbage and potatoes to the pan, pour in the stock, sprinkle in the marjoram and simmer the stew, covered, for 20 min.

Good to know

In winter, a white cabbage often costs less than a euro a head in Germany and is enough for a big pot. With beans, potatoes and caraway, it becomes a stew for four big bowls. The next day it tastes even more rounded.

Swaps

White cabbage → savoy cabbage or sweetheart cabbage (10 min less). Cannellini beans → kidney beans or chickpeas. Potatoes → pearl barley (contains gluten). Caraway → fennel seeds.

Cooking tips

Fry the onion and carrots properly; that gives the stew flavour without meat. Only add the beans at the end so they don't fall apart.

Storage

Keeps for 4 days in the fridge or 3 months in the freezer.

Allergens

Vegan and gluten-free, no nuts or milk. Suitable for children. Suitable in pregnancy.
