Ingredients
400 g watermelon
6-8 mint leaves
Juice of 1 unwaxed lime
200 g ice cubes
Method
You’ll need: blender · chopping board · knife
Cut the watermelon into pieces and remove any seeds. Wash the mint leaves and shake them dry.
Put the watermelon, mint, lime juice and ice cubes in a blender. Blend until the texture is creamy and slushy.
Taste the mixture and balance it with a little more lime juice if needed. For a finer texture, blend the slush again briefly.
If the slush is too runny, add a little more ice and blend again. If it is too firm, let it stand for a moment.
Pour straight into chilled glasses and serve immediately.
Good to know
When it's warm outside, simple is good. This slush is cool, fresh and in your glass within minutes.
Swaps
Lime → lemon (similarly fresh, also provides vitamin C); mint → basil (a different herb aroma, also contains plant compounds); watermelon → strawberries (more fibre per serving); ice cubes → frozen watermelon cubes (more intense fruit flavour, less dilution)
Allergens
The recipe is naturally vegan and considered low in allergens; because it is so cold, serve small portions to young children, and during pregnancy fresh, well-washed ingredients make sense.
