Ingredients

Method

You’ll need: juicer · chopping board · knife

  1. Cut the watermelon into rough chunks and remove all of the tough rind.
  2. Wash the cucumber well and cut it, soft skin and all, into pieces that fit your juicer.
  3. Peel the lemon carefully, removing the outer skin so the juice doesn't turn bitter.
  4. Pick the mint leaves off the tougher stalks and feed them into the juicer in batches with the watermelon, cucumber and lemon.
  5. Juice everything on a low setting so the flavours stay clear and fresh.
  6. Serve the vegan watermelon and cucumber juice well chilled straight away, garnished with a little mint if you like.

Good to know

A juice like this feels like summer in a glass. Fresh, clear and pleasantly light. Just right when you want something cool without much effort.

Swaps

Lemon → lime (similarly fresh, with vitamin C). Mint → basil (also contains aromatic plant compounds). Cucumber → celery (a little stronger, with fibre before juicing). Watermelon → strawberries (more vitamin C, a little less water).

Allergens

The recipe is naturally vegan and free from the most common allergens. Offer it to young children in small amounts because of the acidity; during pregnancy, the ingredients are fine with good kitchen hygiene.
