Vegan tropical pineapple and coconut smoothie
Vegan tropical pineapple and coconut smoothie: a creamy recipe with pineapple, banana, coconut milk, lime and desiccated coconut – fruity, fresh and quickly blended.
Peel the pineapple and cut it into rough chunks along with the banana. Freshly squeeze the lime juice.
Put the pineapple, banana, coconut milk, lime juice and desiccated coconut in the blender.
Blend everything until the smoothie is creamy and even. If it's too thick, add a little water and blend briefly again.
Taste and, if needed, balance with a little more lime juice. For a colder texture, you can blend in a few ice cubes.
Pour the smoothie straight into a glass or bowl. Garnish with desiccated coconut if you like and serve immediately.
Good to know
This smoothie tastes like a holiday in a glass. Fresh, creamy and pleasantly light. Just right when you want something quick that's still satisfying.
Swaps
Banana → mango (more vitamin C, a little less starch) | coconut milk → unsweetened soya milk plus a little creamed coconut (more protein, a bit thinner) | desiccated coconut → oats (more fibre, more filling) | lime juice → orange juice (milder acidity, extra vitamin C)
Allergens
The recipe is vegan and usually suits children well, but contains coconut. If you have a sensitive stomach, the acidity of pineapple can irritate it, and during pregnancy fresh pineapple in normal amounts is considered fine.
