Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife · mixing bowl

  1. Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper. Wash the potatoes, dry them well and cut into even pieces.
  2. Wash the rosemary, shake dry and chop finely. Lightly crush the garlic so it turns soft and mellow in the oven.
  3. Toss the potatoes thoroughly in a large bowl with the olive oil, rosemary, sea salt and black pepper. Mix well so the potatoes are coated all over.
  4. Spread the potatoes out on the tray with a little space between them and tuck the garlic in between. Roast in the oven at 200 °C for 35–40 min until the potatoes are golden brown and soft inside.
  5. Turn the potatoes halfway through the cooking time. That way they brown more evenly and develop more roasted flavour.
  6. To finish, squeeze the soft garlic out of its skin and spoon it over the rosemary potatoes. Serve hot.

Good to know

Sometimes it's the simple oven dishes that bring the most joy. Golden brown outside, soft inside, with lots of aroma and little effort. A tray like this always goes down well.

Swaps

Rosemary → thyme (similarly aromatic, also contains plant compounds); olive oil → avocado oil (mild in flavour, contains monounsaturated fatty acids); waxy potatoes → baby potatoes in their skins (more bite; the skin adds extra fibre); garlic → shallots (milder, also contains plant sulphur compounds, though in a different composition).

Allergens

The recipe is naturally free from most classic allergens; good for children if the pepper is used sparingly, and fine in pregnancy as long as the potatoes are fully cooked and prepared hygienically.
