Looking for a dessert that's sweet without adding anything sweet? Tiger nuts bring a lovely, mild sweetness all of their own.
Rice milk → soya milk (more protein). Tiger nut flour → ground almonds (contains tree nuts; if you have no tiger nuts, you'll then need to sweeten it with a little maple syrup or date paste). Vanilla powder → cocoa powder (for a chocolate version).
Make sure you use very fine tiger nut flour, as a coarser grind can make the pudding gritty.
Covered in the fridge, the pudding keeps for two days without any problem.
Tiger nuts are not nuts. This dish is free from nuts, soya and gluten.
