Ingredients
30 g peanuts (chopped)
100 g edamame
1 carrot (cut into julienne strips)
1 spring onion
1 tbsp lime juice
150 g rice noodles
150 g red cabbage
2 tbsp peanut butter
1 tsp yacon syrup
1 tsp sesame oil
Coriander
1 tbsp soy sauce
Method
You’ll need: chopping board · knife · sieve
Cook the rice noodles according to the packet instructions, then drain and rinse briefly in cold water. This keeps them loose so they stick together less.
Finely shred the red cabbage, cut the carrot into julienne strips and slice the spring onion into thin rings. Cook the edamame briefly if they aren't already pre-cooked.
For the dressing, stir the peanut butter together with the soy sauce, lime juice, yacon syrup and sesame oil. If it's too thick, stir in a little water until smooth.
Toss the rice noodles with the dressing so they soak up the sauce well. Then gently fold in the edamame, carrot and red cabbage.
Finish with the chopped peanuts, spring onion and coriander. Leave everything to stand briefly so the flavours come together.
Divide between bowls and serve with a little extra lime juice if you like.
Good to know
This bowl is creamy, fresh and pleasantly crunchy. It's satisfying without feeling heavy. Just right when you want something quick with lots of flavour.
Swaps
Peanut butter → almond butter (milder flavour, also contains unsaturated fats; contains tree nuts). Rice noodles → buckwheat noodles (more fibre, a little more protein). Yacon syrup → date paste (unrefined sweetness, with a little fibre too). Edamame → chickpeas (more fibre, easy to keep in the cupboard).
Allergens
Contains peanuts, soya and sesame; for children, only serve with finely chopped or soft toppings, and in pregnancy, well-washed ingredients and fully cooked edamame are important. Contains: gluten (soy sauce), sesame.
