Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl · spatula

  1. Peel the apples, cut them into small cubes and put them in a saucepan with a little water and the cinnamon. Cook gently until the apples are soft and you have a chunky compote.
  2. Whisk the teff flour and soya milk together in a bowl until smooth. Leave the batter to stand briefly so the flour can swell.
  3. Heat the coconut oil in a frying pan over a medium heat. Spread a little batter thinly over the pan and cook the crêpes one at a time until golden brown on both sides.
  4. Turn the crêpes carefully, as a batter without egg can be a little more delicate. Keep the finished ones warm for a moment if needed.
  5. Spread the warm apple compote over the crêpes and roll them up loosely.
  6. Serve the teff crêpes straight away if you can, while the compote is still warm. A little extra cinnamon on top goes well.

Good to know

Sometimes it's the simple sweet dishes that are the most comforting. These crêpes are soft, warm and pleasantly down-to-earth. Just right when you want something sweet without much effort.

Swaps

Soya milk → unsweetened oat milk (milder in flavour; contains gluten unless labelled gluten-free) | Apples → pears (similarly mild, contain fibre) | Teff flour → buckwheat flour (gluten-free, contains minerals)

Allergens

The recipe is vegan but contains soya; usually fine for children if the crêpes are served soft, and fine in pregnancy as long as pasteurised soya milk is used.
