Ingredients

Method

You’ll need: oven · stick blender · chopping board · knife · mixing bowl

  1. Preheat the oven to 180 °C (160 °C fan) and lightly grease the moulds. Stone the dates and set them aside.
  2. Blend some of the dates with the almond milk and almond oil until creamy. In a bowl, mix the teff flour, almond flour, baking powder and salt.
  3. Add the liquid mixture to the dry ingredients and stir everything into a smooth batter. Divide the batter evenly between the moulds.
  4. Bake the tartlets at 180 °C for 18–20 min until risen and lightly browned. Then leave them to cool on a rack.
  5. Blend the rest of the dates with the almond butter and a little hot water into a smooth date caramel. Adjust briefly if needed until the cream is spreadable.
  6. Spread the cooled teff almond tartlets with the date caramel and serve fresh.

Good to know

These tartlets are simple and really lovely. Soft inside, creamy on top, with a natural sweetness that doesn't need to shout.

Swaps

Almond oil → mild olive oil (more monounsaturated fats). Almond milk → unsweetened oat milk (a little more beta-glucan; contains gluten unless certified gluten-free). Almond butter → cashew butter (milder flavour, creamy texture). Almond flour → ground hazelnuts (also provides unsaturated fats and fibre).

Allergens

Contains tree nuts (almonds, almond milk) and is not suitable if you have a nut allergy. Fine for children in small portions, though the date caramel is sticky, and the ingredients are unremarkable in pregnancy in normal amounts.
