Vegan sweetheart cabbage stir-fry with tofu

Vegan sweetheart cabbage stir-fry with tofu: a quick recipe with sweetheart cabbage, smoked tofu, ginger, soy sauce and sesame.

At a glance

Ingredients

Method

You’ll need: frying pan · chopping board · knife · grater

  1. Cut the sweetheart cabbage into thin strips. Dice the smoked tofu and finely grate the ginger.
  2. Heat olive oil or avocado oil in a large frying pan. Briefly fry the smoked tofu until it takes on a little colour.
  3. Add the sweetheart cabbage and ginger. Fry everything over a medium heat until the cabbage softens and wilts slightly.
  4. Deglaze with the soy sauce and toss everything thoroughly. Leave the pan for a moment so the flavours come together.
  5. If you like, toast the sesame seeds briefly in a separate pan. That makes their flavour nuttier.
  6. Arrange the sweetheart cabbage stir-fry on plates and scatter over the sesame. Serve hot straight away.

Good to know

I especially like a meal like this on long days. It's quick to make, warm and savoury without being heavy.

Swaps

Smoked tofu → plain tofu (usually a little milder and often a little less salt). Sesame → chopped almonds (also provide unsaturated fats and minerals). Soy sauce → tamari (similar flavour, often gluten-free). Olive oil → avocado oil (both free of seed oils, with mostly unsaturated fats).

Allergens

Contains soya and sesame, and gluten depending on the soy sauce; well suited to children if mildly seasoned, and fine during pregnancy if cooked through properly.
