Vegan sweet potato and peanut soup
Vegan sweet potato and peanut soup with tomatoes, ginger and cumin: creamy, spiced and great for every day. An easy recipe for a satisfying plant-based meal.
Peel the sweet potatoes and dice them small. Finely chop the onion and garlic, and peel and finely grate the ginger.
Heat the olive oil in a large pan and gently cook the onion, garlic and ginger until soft. Add the cumin and toast briefly until fragrant.
Add the sweet potatoes, passata and vegetable stock. Bring everything to the boil, then simmer until the sweet potatoes are soft.
Stir in the peanut butter and blend the soup until silky and creamy. Season with salt and cayenne pepper.
If it's too thick, add a little stock or water. Warm through briefly once more and adjust the seasoning.
Ladle into bowls and serve with coriander. Sprinkle with chopped peanuts if you like.
Good to know
This soup is creamy, spiced and pleasantly well rounded. It's warming, satisfying and on the table without much effort.
Swaps
Peanut butter → almond butter (similarly creamy, also provides unsaturated fatty acids). Coriander → parsley (milder, also contains plant compounds). Sweet potato → squash (similarly soft, with fibre). Olive oil → avocado oil (heat-stable, with mainly unsaturated fatty acids).
Allergens
Contains peanuts and, depending on the stock, possible traces of celery. For children, keep the heat mild, and during pregnancy make sure the herbs are well washed and use a suitable, pasteurised peanut butter.
