When it's grey outside, I especially like oven dishes like this. They're soft and creamy and still bring freshness to the plate. Exactly my kind of comfort food.
Black beans → chickpeas (a little nuttier, also provide fibre and blend into a very creamy purée) Red sweet potatoes → baking potatoes or orange sweet potatoes (milder in flavour, or the classic orange variety with beta-carotene) Avocado → white beans plus 1 tbsp olive oil (creamy, cheaper and also provides protein) Coriander → parsley or chives (fresh flavour, if you don't like coriander)
The recipe contains none of the most common allergens such as milk, egg or wheat; with a sensitive stomach, beans may not agree with you. Mild seasoning is a good idea for children, and in pregnancy, heat the beans well and wash the avocado and herbs thoroughly.
Sweet potatoes mainly provide beta-carotene, plus potassium and fibre. The stronger the orange, the higher the carotenoid content usually is.
They provide fibre, resistant starch, folate and minerals, but can cause wind in some people. Rinsing them thoroughly often helps, as it removes some of the soluble substances from the tin.
Avocado mainly contains monounsaturated fatty acids as well as some vitamin E and potassium. Here it's combined with the baked sweet potatoes.
Coriander brings essential oils and small amounts of vitamin K. Here it's mainly a fresh herb topping, scattered over the filled sweet potatoes at the end.
Lime juice brings acidity and some vitamin C to the dish. It rounds off the cream's flavour and can balance out the heavy, dense texture of the beans and avocado a little.
