Peel the swede, potatoes and carrots and cut everything into 2 cm cubes. Dice the onion.
Soften the onion in the olive oil in a large saucepan for 3 minutes until translucent.
Add the swede, potatoes and carrots and fry for 3 minutes. Pour in the vegetable stock, cover and simmer for 25 minutes until the veg is soft.
Rinse the chickpeas, add them with the marjoram and simmer everything for another 5 minutes.
Mash some of the veg with a potato masher and season with nutmeg and pepper.
Chop the parsley and sprinkle it over the stew before serving.
Good to know
Swedes long had a reputation as emergency food, yet they taste mild and slightly sweet. With chickpeas and marjoram, they make a stew that warms you up on cold days.
Swaps
Swede → parsnip or celeriac. Chickpeas → cannellini beans. Marjoram → thyme. Potatoes → more swede.
Cooking tips
Peel the swede generously – there's a fibrous layer under the skin. The stew tastes even more rounded the next day.
