Ingredients
1 handful of spinach
1 apple
0.5 cucumber
1 unwaxed lemon
1 thumb-sized piece of ginger
200 ml water
Method
You’ll need: blender · chopping board · knife
Wash the spinach, apple and cucumber thoroughly. Core the apple and cut the apple and cucumber into rough chunks.
Squeeze the lemon. Peel the ginger and chop it roughly so it blends more finely.
Put the spinach, apple, cucumber, lemon juice, ginger and water in the blender. Start on a low setting, then switch to high.
Blend everything until the smoothie is even and fine. If you like it thinner, add a little more water.
Taste the smoothie. For more freshness, add a little more lemon juice if needed.
Pour the vegan spinach smoothie into a glass and serve straight away.
Good to know
A green smoothie like this is pleasantly fresh and quick to make. It tastes fresh, slightly fiery and not too sweet.
Swaps
Spinach → lamb's lettuce (milder flavour, also provides folate). Apple → pear (a little softer, also brings fibre). Cucumber → celery (more savoury, also contains lots of water). Water → coconut water (adds electrolytes, but also a little more natural sweetness).
Allergens
The recipe is naturally vegan and free from the most common allergens; ginger and lemon can taste quite intense for children or a sensitive stomach, and normal kitchen amounts are usual in pregnancy.
