Ingredients
200g wholemeal spelt flour
80ml olive oil
3 tbsp water
200g silken tofu
3 tbsp gram flour
1 stalk of leek
150g mushrooms
1 pepper
1 pinch of salt
1 tsp turmeric
1 pinch of nutmeg
1 pinch of pepper
Method
You’ll need: oven · tart tin · stick blender · chopping board · knife
Knead the wholemeal spelt flour with the olive oil, cold water and salt to a smooth dough. Cover and chill the dough for 30 min so it's easy to shape later.
Slice the leek into rings, dice the pepper and slice the mushrooms. Fry the veg briefly in olive oil and season with salt and pepper.
Blend the silken tofu with the gram flour, turmeric, nutmeg, salt and pepper until you have a smooth filling.
Press the dough into a lightly greased tart tin and pull up a rim. Spread the fried veg over it and pour the silken tofu filling on top.
Bake the quiche in the oven at 180 °C (160 °C fan) for 30–35 min until the top is lightly golden brown and the filling looks set. Leave to rest briefly before cutting.
Best served warm. A green salad with a simple dressing of olive oil and lemon juice goes well with it.
Good to know
This quiche is simple, savoury and pleasantly practical for every day. The base turns nutty, the filling creamy, and the veg stays juicy.
Swaps
Wholemeal spelt flour → oat flour (more beta-glucans and usually slightly milder in flavour; contains gluten unless certified gluten-free); silken tofu → firm tofu plus a little water (more protein per serving); mushrooms → broccoli (also provides vitamin C and folate); pepper → spinach (brings folate and vitamin K, among others)
Allergens
Contains gluten and soya; leek can taste quite strong for some children. During pregnancy the ingredients are fine with good kitchen hygiene and a quiche that's baked all the way through.
