Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. Stir the thick soya quark with the cocoa powder in a bowl until smooth.
  2. Work in the yacon syrup until the sweetness is evenly mixed through.
  3. Chop the vegan dark chocolate into fine shards.
  4. Spoon the smooth chocolate pudding into two small serving bowls.
  5. Finally scatter the desiccated coconut and chocolate shards over the pudding as a crunchy layer.

Good to know

You don't need lengthy boiling for an intense pudding. This thick soya quark brings a good amount of protein.

Swaps

Soya quark → almond quark (if you avoid soya). Yacon syrup → date syrup (for a darker caramel note). Desiccated coconut → hemp seeds (for extra omega-3 fats).

Cooking tips

If the quark is too stiff, carefully stir in a tablespoon of sparkling mineral water.

Storage

A great meal-prep dessert that keeps easily for three days, pre-chilled in jars.

Allergens

Contains soya. Vegan, gluten-free.
