- 1 tomato
- 2 tbsp hummus (made with olive oil, no seed oils)

- Fry the tofu slices in a hot non-stick frying pan without oil on both sides until crisp.

Good to know
Crispy tofu and dark wholemeal rolls turn this into a hearty plant-based burger.
Swaps
Hummus → guacamole (if chickpeas don't agree with you, spread a fresh mashed avocado on the roll as a creamy substitute).
Cooking tips
Press the tofu down very firmly in the pan with a spatula while frying, so it develops a much crisper crust.
Storage
Uncooked smoked tofu keeps for weeks. Once fried and in the bun, though, the roll goes soggy, so eat the burger straight away.
Allergens
Contains soya, sesame (in the hummus) and gluten. For a completely gluten-free version, you'll need to choose special rolls.
