Method

You’ll need: blender · sieve

  1. Soak the dates in hot water until soft. Then drain them well.
  2. Leave the silken tofu to drain thoroughly. Put it into a blender with the cocoa powder.
  3. Add the soaked dates and the salt. Blend everything until you have a smooth, even cream.
  4. Divide the chocolate mousse between glasses or bowls. Smooth the surface if needed.
  5. Chill the mousse so it firms up and the flavour becomes more rounded.
  6. Serve the mousse well chilled, straight from the fridge.

Good to know

This mousse is simple and really good. It turns out surprisingly creamy, even though it doesn't need any cream at all. Just the thing if you like it uncomplicated.

Swaps

Dates → unsweetened plum butter (also contains fibre) | Silken tofu → unsweetened coconut yoghurt (more fat, often creamier) | Cocoa powder → highly defatted cocoa powder (usually a little more protein) | Salt → vanilla seeds (milder flavour, no added sweetness)

Allergens

Contains soya, so it's unsuitable for anyone with a soya allergy. Usually fine for children in small portions; in pregnancy it's generally fine, as long as all the ingredients are fresh and handled hygienically.
