Ingredients

Method

You’ll need: frying pan · saucepan · mixing bowl · wooden spoon

  1. Tear the seitan into rough, irregular pieces. That way the wings get more crispy edges later.
  2. Heat olive oil, avocado oil or coconut oil in a deep frying pan. Fry the seitan in it until golden brown and crispy all over.
  3. Melt the vegan butter in a small saucepan and stir in the garlic powder. Warm everything briefly so the flavour spreads well.
  4. Add the buffalo hot sauce and bring the sauce briefly to the boil. Stir until smooth and even.
  5. Take the seitan out of the frying pan and put it in a bowl. Pour the buffalo sauce over it and toss everything thoroughly.
  6. Serve immediately, ideally hot and fresh from the sauce. Veg sticks or a plant-based dip go well with it.

Good to know

When you fancy something savoury with a bit of fire, this is exactly right. Crispy outside, juicy inside and wonderfully spicy. So simple it works on a weeknight too.

Swaps

Vegan butter → olive oil. Seitan → tempeh (also provides fibre; contains soya). Buffalo hot sauce → mild chilli sauce without refined sugar (less heat). Garlic powder → fresh garlic (contains natural plant compounds).

Allergens

Contains gluten (wheat); depending on the vegan butter or sauce, it may contain other allergens such as soya. For children, serve only mildly seasoned; in pregnancy, pasteurised products handled with good kitchen hygiene are the safe choice.
