Preheat the oven to 200 °C (180 °C fan) and get a baking tray ready. Cut the cauliflower into florets and drain the chickpeas well.
Toss the cauliflower and chickpeas with olive oil, cumin, paprika, salt and pepper. Spread over the tray and roast at 200 °C for 25–30 min, until the cauliflower is golden brown and the chickpeas are slightly crisp.
Meanwhile, cook the quinoa in lightly salted water for 12–15 min. Then leave to steam dry briefly and fluff up with a fork.
For the dressing, stir the tahini with the lemon juice, olive oil and water until smooth. Season with salt to taste – the dressing should be creamy and well balanced.
Finely chop the parsley. Take the roasted cauliflower and chickpeas out of the oven and leave to cool briefly.
To serve, divide the quinoa between bowls, add the roasted veg and finish with the tahini dressing and parsley.
Good to know
A bowl like this is simple and full of roasted flavours. I especially love the way the creamy dressing and the crisp bits from the oven come together.
Contains sesame (tahini). Good for children if the spices are kept mild; in pregnancy it's fine as long as the chickpeas are heated well and all the ingredients are prepared fresh.
