Vegan red cabbage with apple, cloves and bay leaves
Vegan red cabbage with apples, onions, cloves, bay leaves and cinnamon, braised with apple juice and cider vinegar. The side dish for St Martin's goose and for autumn dinners.
Remove the outer leaves and the core from the red cabbage and slice or shred it finely.
Peel the apples, remove the cores and dice them. Dice the onion.
Soften the onion in the olive oil in a large pan for 3 minutes, add the red cabbage and apples and fry for 5 minutes, stirring.
Pour in the cider vinegar, apple juice and water and add the maple syrup, cloves, bay leaves, cinnamon stick, salt and pepper.
Braise the red cabbage, covered, over a low heat for 50 minutes, stirring now and then.
Remove the cloves, bay leaves and cinnamon stick and season the red cabbage to taste with vinegar, salt and pepper.
Good to know
St Martin's goose without red cabbage is like 11 November without lanterns. Here the cabbage braises with apples, cloves and bay, sweetened with apple juice and a little maple syrup. On the second day, the flavour is even more rounded.
Swaps
Olive oil → goose fat (no longer vegan). Maple syrup → honey (no longer vegan). Apple juice → redcurrant juice (more tart). Cider vinegar → balsamic vinegar (darker).
Cooking tips
Add the vinegar early so the red cabbage stays bright red. Shred it finely so it turns soft within 50 minutes.
