  1. Halve the avocado, remove the stone and put the flesh into a blender.
  2. Add the cocoa powder, maple syrup, almond milk and sea salt.
  3. Blend everything until the mixture is smooth, dark and creamy. If needed, scrape the mixture down from the sides now and then.

  5. Chill in the fridge until it firms up.
  6. Serve well chilled. Finish with a little cocoa powder or a few berries if you like.

Good to know

When it needs to be quick but should still taste like dessert, this pudding is just right. Creamy, chocolatey and pleasantly simple.

Swaps

Maple syrup → date paste (made from whole dates, so it brings some fibre); almond milk → tinned coconut milk (creamier, a little more fat); cocoa powder → raw cacao powder (similar nutrient profile, often more bitter in taste); avocado → banana (milder and sweeter, with a different texture)

Allergens

Contains tree nuts (almond milk), so it isn't suitable for anyone with a nut allergy. Usually fine for children in small portions; in pregnancy, no problem with fresh, carefully prepared ingredients. Contains: tree nuts.
