At a glance

Ingredients

Method

  1. Put the raspberries in a large glass and crush them lightly so the juice and flavour come out.
  2. Fill the glass with ice cubes so the drink is well chilled straight away.
  3. Pour the coconut water over and stir briefly so the raspberries are spread through.
  4. Add the lime juice and taste the refresher.
  5. If you like, leave the drink to stand for a moment so the fruity notes come together a little.
  6. To serve, stir briefly once more and enjoy it ice-cold straight away.

Good to know

Sometimes all you need is something fresh in a glass. This refresher is light, crisp in flavour and pleasantly fruity.

Swaps

Coconut water → chilled green tea (less sugar, more polyphenols) Raspberries → strawberries (milder, contain vitamin C) Lime juice → lemon juice (similarly fresh, often a little milder) Ice cubes → frozen cucumber slices (extra freshness, hardly any calories)

Allergens

The recipe is naturally free from the main allergens; lime juice can taste quite sharp if you're sensitive to acidity. For children and during pregnancy it's usually fine in normal amounts, as long as the ingredients are fresh and clean.

Frequently asked questions

Which minerals are in coconut water?

Coconut water mainly contains potassium, plus smaller amounts of magnesium, sodium and calcium. The exact values vary depending on the brand and how ripe the coconut was.

What do raspberries bring besides flavour?

Raspberries contain fibre, vitamin C, manganese and various polyphenols. The seeds in particular account for part of the fibre.

Does lime juice suit a sensitive stomach?

That varies from person to person. If you have a sensitive stomach, reflux or a sore mouth, the acidity can feel unpleasant.

Are the raspberry seeds a problem?

For many people they aren't – they contain fibre. If you don't get on well with small seeds, straining the raspberries through a fine sieve can be more pleasant.

Does coconut water contain a lot of sugar?

Coconut water naturally contains sugar, but considerably less than many lemonades or juices. Exactly how much depends a lot on the product, so it's worth checking the label.
