Vegan radish and cucumber salad with radishes, cucumber, dill, cider vinegar and olive oil: a fresh, crunchy salad for light cooking and fresh flavours.
You’ll need: chopping board · knife · mixing bowl
So simple and so good: this salad is all about freshness, crunch and a delicate acidity. Just the thing when you want something light and crisp.
Cider vinegar → lemon juice (more vitamin C, fresh flavour) Olive oil → diced avocado (adds fibre and makes it more filling) Salt → finely chopped celery leaves (more flavour, so you need less salt) Cucumber → celery (more fibre, a firmer bite)
The recipe is naturally free from most of the classic allergens. Radishes, dill or vinegar can be a little irritating for a sensitive stomach, so season mildly for children, and during pregnancy make sure the vegetables are thoroughly washed.
Radishes mainly provide vitamin C and a little folate. Cucumber contains smaller amounts of vitamin K and potassium, but is mostly water.
Dill contains vitamin K and small amounts of essential oils, among other things. Since the amount used is usually fairly small, its contribution to the nutrients stays modest.
Cider vinegar mainly provides acidity and flavour. In the salad, it's mainly about the flavour.
Olive oil provides monounsaturated fatty acids, mainly oleic acid, and goes well with raw vegetables. It also softens the acidity of the vinegar.
That varies a lot from person to person: cucumber is often found mild, while the heat of raw radishes can be a bit much for sensitive people. If that's you, use fewer radishes and season gently.
