Vegan raclette pans with smoked tofu and cashew cheese sauce
Vegan raclette pans with smoked tofu, broccoli and a cheese sauce made from cashews and nutritional yeast, served with potatoes boiled in their skins. A dairy-free dinner with 23 g protein.
Pour boiling water over the cashews, leave them to soak for 15 minutes, then drain.
Blend the cashews with the measured water, nutritional yeast, potato starch, mustard, lemon juice, paprika and salt in a blender until smooth.
Boil the potatoes in their skins in salted water for 20 minutes until cooked. Divide the broccoli into small florets and cook it with them for the last 3 minutes.
Dice the smoked tofu, slice the onion into rings and fry both in the olive oil for 5 minutes.
Preheat the raclette grill for 10 minutes. Fill the little pans with broccoli, tofu and onion, top with 2 tbsp cashew sauce and cook under the grill for 6 to 8 minutes.
Eat the pans with the potatoes as soon as the sauce bubbles and sets.
Good to know
Shop-bought vegan cheese often melts only reluctantly in a raclette. This sauce made from cashews and potato starch turns stretchy under the grill and gets brown spots. Smoked tofu brings the smoky note.
The sauce thickens as it stands. If it gets too firm, stir in 1 to 2 tbsp water. Without a high-powered blender, soak the cashews in water for 2 hours.
Storage
The cashew sauce keeps in a jar in the fridge for 4 days, and opened smoked tofu in water for 3 days.
Allergens
Contains tree nuts (cashews), soya and mustard; vegan, and gluten-free if the mustard is gluten-free. Suitable for children and in pregnancy.
