Ingredients

Method

You’ll need: frying pan · chopping board · knife · sieve

  1. Rinse the quinoa thoroughly in a sieve and cook in water according to the packet instructions until fluffy and tender. Then let the steam escape for a moment.
  2. Briefly cook or thaw the edamame in hot water until tender. Cut the carrot into thin strips, dice or slice the cucumber and slice the avocado.
  3. Toast the sesame seeds briefly in a dry frying pan until fragrant. Keep an eye on them so they don't get too dark.
  4. For the dressing, whisk together the olive oil, sesame oil, lime juice, grated ginger and soy sauce. Taste and soften with a little water if needed.
  5. Divide the quinoa between bowls and arrange the edamame, carrot, cucumber and avocado on top. Drizzle with the dressing and scatter over the toasted sesame.
  6. Serve straight away, while the quinoa is still slightly warm and the other ingredients are fresh and crunchy.

Good to know

A bowl like this doesn't make a fuss and still looks great on the table. Fresh, creamy and with a nice bite. Just right when you want something simple yet balanced.

Swaps

Quinoa → buckwheat (also contains fibre and minerals). Edamame → chickpeas (more fibre, also plant protein). Sesame oil → a little more olive oil (more monounsaturated fatty acids). Soy sauce → tamari (gluten-free alternative with a similar flavour).

Allergens

Contains soya and sesame, and gluten from the soy sauce (most soy sauce is brewed with wheat; tamari is a gluten-free alternative). Suitable for children if the ginger and soy sauce are used sparingly. Fine during pregnancy as long as all ingredients are fresh and the edamame are heated through completely.
