Good to know

Everyone knows pumpernickel from the cold buffet; here it gets a smoky tofu cream. It's reminiscent of smoked salmon spread, but without any fish. The cucumber on top keeps the bites fresh.

Swaps

Smoked tofu → plain tofu with more smoked paprika. Soya yoghurt → oat yoghurt. Pumpernickel → wholegrain rye bread. Cress → dill.

The cream gets firmer if it stands in the fridge for 30 minutes. Top the bites no more than an hour in advance, or the cucumber will release water.
