Vegan pomegranate and watermelon juice

Vegan pomegranate and watermelon juice with watermelon, lime and mint: a fresh, fruity juice with a light tang and a cool herby note.

Ingredients

Method

You’ll need: juicer · chopping board · knife · mixing bowl · sieve

  1. Halve the pomegranate and carefully remove the seeds over a bowl. Pick out any large bits of membrane as you go.
  2. Cut the watermelon flesh away from the rind and dice it. Peel the lime so most of the white pith is removed as well.
  3. Feed the watermelon, lime and mint into the juicer bit by bit. Work slowly so the juice comes out even.
  4. Finally add the pomegranate seeds and juice everything. Then give the juice a quick stir.
  5. If you like it smoother, pour the juice through a sieve.
  6. Serve the juice well chilled straight away and garnish with a little mint if you like.

Good to know

A juice like this tastes like summer in a glass. Fresh, fruity and pleasantly light. I especially like it when it's warm outside.

Swaps

Watermelon → honeydew melon (milder flavour, also very juicy); lime → lemon (also provides vitamin C); mint → lemon balm (aromatic, also contains plant compounds); pomegranate → red grapes (also bring polyphenols)

Allergens

The recipe is naturally vegan and contains none of the classic main allergens. For children, serve it mild and introduce it slowly because of the acidity; during pregnancy it's generally fine with well-washed, fresh ingredients.
