Ingredients

Method

You’ll need: high-speed blender · chopping board · knife · sieve

  1. Wash the pineapple, lemon, yellow pepper and turmeric thoroughly. Peel the pineapple, deseed the pepper and cut everything into rough pieces.
  2. Peel the lemon if you like, so the juice turns out milder. Roughly chop the fresh turmeric root or have the ground turmeric ready.
  3. Put the pineapple, lemon, yellow pepper, turmeric and black pepper in a high-speed blender. Blend everything finely until the juice is as smooth as possible.
  4. If the consistency is too thick for you, pour the juice through a fine sieve. That makes it clearer and easier to drink.
  5. Taste it: the pineapple brings sweetness, the lemon freshness and the turmeric an earthy note. Blend briefly again if needed.
  6. Pour into a glass and serve straight away. Garnish with a small piece of pineapple or a little lemon zest, if you like.

Good to know

Fruity, fresh and lightly spiced. This juice is simple to make and tastes bright and juicy.

Swaps

Pineapple → green apple (less sugar) Yellow pepper → orange pepper (similar amount of vitamin C, plus more carotenoids) Unwaxed lemon → lime (similar vitamin C, a little milder in flavour) Turmeric root → fresh ginger (provides pungent compounds such as gingerols and goes well in juice)

Allergens

The ingredients aren't among the main allergens, but they can irritate a sensitive stomach or people sensitive to histamine; use smaller amounts for children, and during pregnancy turmeric is normal as a spice – high-dose supplements are a different matter.

Frequently asked questions

What's in yellow pepper, nutritionally?

Yellow pepper provides a lot of vitamin C and also brings carotenoids. The amounts vary a little depending on ripeness and variety.

Is fresh turmeric root different from ground turmeric?

Both contain curcuminoids; the powder is usually more concentrated and stronger in flavour. Fresh turmeric adds more juice and a slightly fresher, gently bitter note.

Why is there black pepper in the juice?

Black pepper provides piperine. This plant compound is often used together with turmeric because it can affect how available certain compounds are.

Do sensitive people tolerate pineapple well?

Not always. Pineapple is acidic and its bromelain can slightly irritate the mouth, especially if you have sensitive mucous membranes or the fruit is very unripe.

What does the lemon bring besides acidity?

Lemon provides vitamin C and small amounts of plant compounds such as flavanones. It rounds off the flavour and makes the juice fresher.
