Ingredients
100g pecans
50g cacao butter
2 tbsp raw cacao
1 tbsp maple syrup
Method
You’ll need: chopping board · knife
Finely chop the pecans so that the mixture holds together well later and the bites get an even texture.
Melt the cacao butter slowly over a low heat until it is completely liquid. Then stir in the raw cacao and maple syrup until smooth.
Add the chopped pecans to the chocolate mixture and mix thoroughly until the nuts are well coated.
Spoon the mixture into small silicone moulds or a tin lined with baking paper and smooth the top slightly.
Chill the bites until they have set completely and come out of the mould easily.
To serve: take the pecan bites out of the fridge shortly before eating and serve them slightly chilled.
Good to know
These little bites are simple but special. They melt gently and still have some bite. Just right when you want something nutty and not too sweet.
Swaps
Pecans → walnuts (a little more omega-3 fatty acids) | Cacao butter → coconut oil (easier to work with, milder flavour) | Maple syrup → date paste (more fibre) | Raw cacao → fat-reduced cocoa powder (often a stronger cocoa flavour)
Allergens
Contains nuts; for young children, only with care because of the nuts and the firm texture, and usually unproblematic during pregnancy, as long as nuts and cocoa agree with you.
