Vegan pear and buckwheat porridge with ginger and hazelnuts
Vegan pear and buckwheat porridge made with buckwheat flakes, oat milk and ginger, topped with fried pears and hazelnuts. A warm breakfast without milk or egg, ready in 20 minutes.
Peel and finely grate the ginger. Dice one pear and cut the other into wedges.
Bring the oat milk, buckwheat flakes, diced pear, ginger, cinnamon and salt to the boil in a saucepan.
Simmer everything over a low heat for 5 min, until the flakes are soft, then stir in the ground linseed.
Toast the hazelnuts in a dry frying pan for 3 min and roughly chop them.
Fry the pear wedges with the maple syrup in the same pan for 2 min on each side.
Divide the porridge between two bowls and top with the pear wedges and hazelnuts.
Good to know
Buckwheat tastes stronger than oats and goes well with pear. The fresh ginger brings some heat to the porridge. The fried pear wedges on top taste like a little dessert.
