  2. Stir in the soya milk, soya yoghurt, maple syrup, ground linseed, cinnamon and salt. Mix in the oats and baking powder and leave the batter to swell for 5 minutes.
  3. Quarter the pear, remove the core and cut it into wedges. Roughly chop the walnuts.
  4. Divide the batter between two ovenproof dishes, top with the pear wedges and sprinkle over the walnuts.

Good to know

Baked oats are porridge that comes out of the oven like a cake. The inside stays moist, while the pear and walnuts on top caramelise slightly. You can mix the batter the night before and just bake it in the morning.

Swaps

Pear → apple or plums. Walnuts → pecans. Soya yoghurt → oat yoghurt (the soya milk still provides protein). Oats → gluten-free oats (then gluten-free).

Cooking tips

The riper the banana, the sweeter the oats and the less maple syrup you need. They're done when a wooden skewer pushed into the middle comes out without any batter on it.
