At a glance

Ingredients

Method

You’ll need: saucepan · chopping board · knife · wooden spoon

  1. Briefly toast the peanuts in a wide saucepan and add the salt. This makes them more aromatic and slightly warm.
  2. Add the maple syrup and vanilla extract and stir everything over a medium heat. The peanuts should be evenly coated and glossy.
  3. Keep cooking briefly, stirring constantly, until the syrup thickens a little and sticks to the peanuts.
  4. Tip the mixture into a small tin or container and press it down firmly with the base of a mug. Work quickly while the mixture can still be shaped.
  5. Put the tin in the freezer until the block is completely firm. Then lift it out and cut it into bars or pieces.
  6. To serve, leave the vegan peanut brittle block at room temperature briefly so it cuts cleanly and is easy to bite.

Good to know

Sometimes the simple things are the best. This block is crunchy, sweet and pleasantly pure.

Swaps

Peanuts → almonds (more vitamin E) | maple syrup → date paste (more fibre) | vanilla extract → Ceylon cinnamon (provides polyphenols) | peanuts → cashews (a little milder and creamier to bite)

Allergens

Contains peanuts and is not suitable for people with a peanut allergy. For children, only give pieces of a suitable size; during pregnancy, peanuts are generally fine unless there's an allergy or a medical reason not to eat them.
