Ingredients

Method

You’ll need: saucepan · blender · mixing bowl · sieve

  1. Blanch the peas briefly in boiling salted water, then drain and refresh in iced water. That way they stay tender and nice and green.
  2. Wash the mint and pick off the leaves. Then let them drain well.
  3. Put the peas, mint, lemon juice and olive oil in a blender. Blend briefly until creamy but with a little texture.
  4. Season the spread with salt, pepper and chilli flakes. Blend briefly again if needed.
  5. Spoon the pea and mint spread into a clean jar or bowl. Keep it chilled until serving.

Good to know

This spread is ready in a few minutes and still tastes special. Fresh, creamy and with just that little bit of heat that makes it interesting.

Swaps

Mint → parsley (milder, also provides vitamin K). Lemon juice → lime juice (similarly fresh, also contains vitamin C). Olive oil → avocado oil (milder flavour, monounsaturated fats). Chilli flakes → black pepper (less heat, but aromatic).

Allergens

The recipe is naturally vegan and easy for everyday eating. Leave out the chilli flakes for small children, and during pregnancy make sure the mint is well washed and the spread is stored clean and chilled.
