Ingredients
200g papaya
150g cucumber
1 lime
150ml water
2 tsp chia seeds
Method
You’ll need: blender · chopping board · knife
Peel the papaya, remove the seeds and cut the flesh into rough chunks.
Wash the cucumber thoroughly and cut it into thick slices with the skin on.
Squeeze the lime and put the juice in the blender with the papaya, cucumber, chia seeds and water.
Blend everything until the punch is even and smooth. If you like it thinner, add a little more water.
Let the drink stand briefly so the chia seeds can swell a little.
Pour the vegan papaya and cucumber punch into glasses and serve well chilled.
Good to know
Sometimes a drink can simply be fresh and pleasant. That's exactly how this punch feels: light, fresh and nicely uncomplicated.
Swaps
Cucumber → courgette (milder flavour, also contains lots of water); lime → lemon (similar acidity, provides vitamin C); chia seeds → ground linseed (fibre and omega-3 fatty acids).
Allergens
The recipe is naturally vegan and contains none of the most common allergens. With small children, take a little care with chia seeds because of their swelling texture, and during pregnancy the drink is generally considered fine in normal amounts.
