Ingredients
60g rolled oats
150ml oat milk
1 tbsp chia seeds
100g berries
1 tbsp coconut chips
1 tbsp almond butter
1 tsp maple syrup
Method
You’ll need: chopping board · knife · jar with lid
In the evening, put the oats, oat milk and chia seeds in a jar with a lid and stir thoroughly so everything combines well.
Close the jar and leave to soak overnight in the fridge until the mixture is soft and thick.
In the morning, stir the muesli well. If it seems too thick, stir in a little oat milk.
Stir in the maple syrup until the gentle sweetness is evenly spread.
Wash the berries and cut larger ones if needed. Stir the almond butter briefly until smooth so it spreads more easily over the muesli.
To serve, top the overnight muesli with the berries, coconut chips and almond butter and enjoy straight away.
Good to know
A breakfast like this takes the rush out of the morning. Stirred together quickly in the evening, something creamy is already waiting in the fridge the next day. Simple, unhurried, good.
Swaps
Oat milk → unsweetened almond milk (a mild, nutty flavour). Almond butter → cashew butter (similarly creamy, milder in flavour). Maple syrup → mashed banana (natural sweetness plus extra fibre). Coconut chips → chopped walnuts (more omega-3 fatty acids and vitamin E).
Allergens
Contains tree nuts from the almond butter, and gluten from the oats and oat milk unless they're certified gluten-free; well suited to children with a soft texture, and generally fine in pregnancy with fresh, well-washed berries. Contains: gluten (oats).
