Vegan oven-roasted chickpea snack: crispy chickpeas with olive oil, smoked and sweet paprika, garlic and a gentle kick of cayenne.
You’ll need: oven · baking tray · mixing bowl · sieve
A snack like this disappears from the tray faster than you'd think. Crisp on the outside, still slightly tender inside, with spicy depth rather than just heat.
Chickpeas → white beans (milder flavour, similar protein and fibre content) Olive oil → avocado oil (stable when heated, neutral flavour, not a seed oil) Paprika → smoked paprika (more intense flavour without extra ingredients) Garlic powder → onion powder (milder, slightly sweet flavour)
Chickpeas are pulses and most people tolerate them well, but take care if you have a legume allergy or a sensitive stomach. Generally fine for children and during pregnancy – just go easy on the cayenne.
Chickpeas contain iron, as well as folate and magnesium. Iron from plants isn't absorbed as well as iron from animal foods.
They contain fibre and certain oligosaccharides that are fermented in the large intestine. That's normal, but how much it affects you varies a lot depending on how sensitive your gut is.
Olive oil mainly provides monounsaturated fatty acids, especially oleic acid. Depending on quality it also contains small amounts of polyphenols, although olive oil made for high heat usually tastes milder.
Cayenne contains capsaicin, which makes it hot and can irritate sensitive mucous membranes. Use it sparingly if you have heartburn or a sensitive stomach, or if children are eating too.
Partly, but not completely. Drying and processing change some of the sulphur compounds; the flavour remains, but the composition isn't identical.
