Vegan one-pot bean goulash with peppers and potatoes
Vegan one-pot bean goulash with kidney beans, potatoes, peppers, onions, tomato purée, paprika and caraway. A gluten-free lunch with 14 g of fibre per serving.
Dice the onions and garlic and fry them in the olive oil in a large pan for 6 min, until the onions are golden brown.
Stir in the tomato purée, paprika, smoked paprika, caraway and marjoram and toast everything for 1 min.
Peel the potatoes and cut the potatoes and peppers into 2 cm cubes. Add both to the pan with the stock and simmer the goulash, covered, for 20 min.
Rinse the beans in a sieve, add them and cook the goulash uncovered for another 10 min, until thick.
Season with the apple cider vinegar and salt and serve the goulash hot.
Good to know
A goulash without meat mainly needs one thing: enough paprika and onions that are properly browned. Kidney beans give it bite, potatoes thicken the sauce. It costs little and tastes even better on the second day.
Swaps
Kidney beans → black beans or chickpeas. Potatoes → sweet potatoes. Peppers → courgettes. Apple cider vinegar → lemon juice.
Cooking tips
Let the onions really brown; they give the goulash the depth that would otherwise come from the meat. Only toast the paprika briefly, or it turns bitter.
Storage
Keeps for 4 days in the fridge or 3 months in the freezer.
Allergens
Vegan and gluten-free, no nuts. For children, use sweet paprika instead of smoked paprika. Suitable in pregnancy.
