Vegan mushroom and chestnut soup with thyme
Vegan mushroom and chestnut soup with thyme: a creamy recipe with mushrooms, chestnuts, garlic and vegetable stock – hearty, warming and easy for every day.
Trim and quarter the mushrooms. Finely dice the onion and garlic and roughly halve the chestnuts.
Heat the olive oil in a large pan and soften the onion and garlic briefly until translucent. Add the mushrooms and fry over a high heat until well browned.
Stir in the chestnuts and thyme and toast briefly. Deglaze with the vegetable stock and bring everything to the boil.
Cover and simmer the soup over a medium heat until the flavours have come together. Then blend until smooth.
Season to taste with salt, pepper and nutmeg. Adjust the consistency with a little stock if needed.
Ladle into bowls and serve with the pumpkin seeds and a little thyme.
Good to know
This soup is gentle, earthy and really comforting. It suits grey days just as well as a calm evening at the table.
Swaps
Mushrooms → king oyster mushrooms (stronger flavour); chestnuts → white beans (also provide protein and fibre); pumpkin seeds → walnuts (tree nuts; contain omega-3 fatty acids)
Cooking tips
Shop-bought stock often contains yeast extract. For low-histamine cooking, make your own.
Allergens
The recipe is naturally vegan and gluten-free; pumpkin seeds can be an issue for some sensitive people. For children, season mildly, and in pregnancy use fresh ingredients, heat everything through well and prepare it hygienically.
