Ingredients

Method

You’ll need: loaf tin · chopping board · knife

  1. Slowly melt the cacao butter over a bain-marie until clear.
  2. Carefully whisk the cocoa powder and vanilla extract into the melted cacao butter until there are no dry pockets left.
  3. Chop the macadamia nuts into rough chunks.
  4. Pour the chocolate mixture into a small loaf tin lined with reusable baking paper.
  5. Scatter over the macadamia chunks and sea salt and chill the fudge in the freezer for 2 hours.

Good to know

Ice-cold fudge that's completely unsweetened? Cacao butter melts at body temperature and gives it a wonderful mouthfeel.

Swaps

Macadamia nuts → pecans (for a slightly chewier texture). Cacao butter → virgin coconut oil (though it melts much faster in your hands). Vanilla extract → liquid almond flavouring.

Cooking tips

Never overheat the cacao butter, or it will separate and turn dull as it cools.

Storage

The fudge must be kept in an airtight container in the fridge, as it softens quickly.

Allergens

Contains tree nuts (macadamia). Vegan, gluten-free and fully keto.
