Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife · sieve

  1. Preheat the oven to 200 °C (180 °C fan) and cut the sweet potatoes into very thin slices. Toss them thoroughly with the olive oil, hot paprika and coarse sea salt.
  2. Spread the sweet potato slices in a single layer on baking trays. Bake in the oven at 200 °C for 15–20 min until they brown slightly at the edges and turn crisp.
  3. Meanwhile, rinse the black beans and drain well. Finely dice the tomatoes, cut the avocado into chunks, finely slice the jalapeño and roughly chop the coriander.
  4. Carefully lift the baked sweet potato chips off the tray and spread them out on a platter or on plates. Top with the black beans, tomatoes and avocado.
  5. Finally, add the lime juice, jalapeño and coriander to the loaded sweet potato nachos. Finish with a little coarse sea salt and paprika if you like.
  6. Serve straight away, while the sweet potato chips are still warm and the topping is fresh.

Good to know

When you need something quick that still tastes like proper food, I especially like oven recipes like this. Warm, crunchy, creamy and with lots of freshness on the plate.

Swaps

Black beans → chickpeas (more bite, mild nutty flavour) Avocado → guacamole made from avocado + extra lime juice + coriander (fresher, more aromatic, creamy with no additives) Vine tomatoes → cherry tomatoes (more intense flavour, often sweeter and firmer) Olive oil → avocado oil (more heat-stable, mild flavour)

Allergens

The recipe contains none of the most common allergens such as milk, egg or nuts. Beans and jalapeño can be harder to tolerate if you have a sensitive stomach; for children, leave out the jalapeño, and in pregnancy only use well-washed ingredients.

Frequently asked questions

What's in black beans, nutritionally?

Black beans provide fibre, plant protein, folate, magnesium and iron. Depending on how sensitive you are, pulses can also encourage bloating because of certain carbohydrates.

Why do avocado and olive oil go well with sweet potatoes?

The olive oil helps the thin slices crisp up in the oven, and the creamy avocado balances the sweetness and the heat.

Is jalapeño too hot for some people?

It can be. The heat comes mainly from capsaicin, which many people enjoy, but it can irritate a sensitive stomach or reflux.

Which nutrients do tomatoes and lime bring?

Tomatoes contain vitamin C and lycopene, among others, and lime mainly vitamin C and organic acids. Coriander mainly adds its fresh, citrusy flavour.

Are tinned beans a good option?

They still provide fibre, folate and minerals and are a solid everyday option. Rinsing them removes some of the sodium from the canning liquid.
