Ingredients

Method

You’ll need: food processor · mixing bowl · grater

  1. Blend the macadamia nuts in a food processor until you have a smooth, thick macadamia butter. Scrape the mixture down from the sides in between if needed.
  2. Put the nut butter in a cold bowl and stir in the coconut oil, desiccated coconut, lime zest and a squeeze of lime juice. The mixture should be soft but not too runny.
  3. Put the bowl in the freezer briefly until the mixture can be shaped. That way the balls roll neatly.
  4. With cool hands, shape small balls and roll them in desiccated coconut. If the mixture gets too soft, chill it again briefly.
  5. Serve the fat bombs well chilled so they stay firm and creamy at the same time.

Good to know

These little balls are creamy, fresh and refreshingly simple. The lime adds lightness, while the texture stays rich and tender.

Swaps

Macadamia nuts → blanched almonds (more protein, milder flavour) Macadamia nuts → pecans (similarly high in fat, slightly sweet) Coconut oil → cacao butter (firmer at room temperature, delicate flavour) Desiccated coconut → unsweetened shredded almonds or finely chopped hazelnuts (more bite, nuttier)

Allergens

Contains tree nuts and coconut; only with care for young children because of the shape and texture, and fine in pregnancy in normal kitchen amounts, as long as you tolerate the ingredients well.

Frequently asked questions

Which fats are in macadamia nuts?

Macadamias mainly contain monounsaturated fatty acids, especially oleic acid, plus smaller amounts of saturated and polyunsaturated fatty acids.

What does coconut oil provide nutritionally?

Coconut oil consists mainly of saturated fatty acids, including lauric acid. It has a distinctive flavour; how it's assessed nutritionally depends on your overall diet.

Is lime zest just flavour or nutritionally relevant too?

The zest mainly provides essential oils and plant compounds, plus a little vitamin C. The amounts in the recipe are small, but they shape the flavour a lot.

Does desiccated coconut have any special nutritional value?

Desiccated coconut provides some fibre and smaller amounts of minerals such as manganese and iron. In the recipe it mainly adds texture and a mildly sweet coconut flavour.
