At a glance Serves 5 Prep time: 20 min No cooking needed Total time: 20 min Calories: 340 kcal per serving Protein: 8 g Fat: 18 g Carbs: 34 g Ingredients 150g rolled oats 3 tbsp hazelnut butter 50g hazelnuts 100g dates 50g cocoa powder 2 tbsp coconut oil Method You’ll need: frying pan · stick blender · chopping board · knife
Toast the hazelnuts briefly in a frying pan until fragrant, then chop them roughly. Blend the dates with the hazelnut butter into a smooth, thick cream. Work the rolled oats and half the chopped hazelnuts into the cream until you have a mixture you can shape. Press the mixture into a shallow container or tin and scatter the remaining hazelnuts over it. Stir the cocoa powder with the coconut oil to make a glaze and spread it over the top. Chill the tin, or freeze briefly, until everything is firm. Cut into bars and serve well chilled. Good to know These bars taste like a little chocolate snack from the fridge. Soft, nutty and pleasantly bittersweet – just right for the afternoon.
Swaps Hazelnut butter → almond butter (more vitamin E) | hazelnuts → walnuts (more omega-3 fatty acids) | dates → dried figs (more calcium)
