Ingredients
1 tsp matcha
1 avocado
1 handful of baby spinach
200 ml ice-cold water
A few ice cubes
Method
You’ll need: blender · chopping board · knife
Wash the baby spinach thoroughly. Halve and stone the avocado and scoop out the flesh.
Briefly stir the matcha with the ice-cold water until smooth so no lumps form.
Put the avocado, baby spinach, mixed matcha and ice cubes in the blender.
Blend everything until the smoothie is creamy and evenly green. Thin it with a little water if needed.
Taste briefly and blend again if you like, until smooth.
Pour the smoothie into a glass and serve straight away.
Good to know
When you want something light, green and creamy in the morning, this smoothie fits the bill. It's quick to make and pleasantly mellow in flavour.
Swaps
Baby spinach → lamb's lettuce (milder flavour, also contains folate). Matcha → mild cocoa powder with nothing added (different polyphenols, much less caffeine). Ice-cold water → unsweetened tinned coconut milk, diluted with water (thicker texture, a little more fat).
Allergens
Naturally free from soya, nuts and gluten, as long as no contaminated products are used. Because of the caffeine in matcha, it's not ideal for small children, and best kept to moderate amounts during pregnancy.
