Vegan green matcha and coconut morning smoothie with baby spinach, banana, creamy coconut milk, matcha and hemp seeds – mild, green and pleasantly satisfying.
You’ll need: blender
Some mornings don't need anything complicated. Just something cool and creamy, and a slow start to the day.
Baby spinach → kale (more vitamin C and K, a stronger flavour) ½ banana → ½ avocado (less sugar, more monounsaturated fats, creamy texture) 150ml creamy tinned coconut milk → unsweetened coconut yoghurt + a little water (more protein depending on the product, still creamy) 1 tsp hulled hemp seeds → 1 tsp almond butter (more vitamin E and monounsaturated fats, also makes it creamy)
Hemp seeds aren't one of the major allergens; if you have a sensitive stomach, the caffeine in matcha can irritate it. For children only in small amounts, during pregnancy factor in the caffeine, and if you're unsure, check with your doctor.
Matcha contains natural caffeine as well as polyphenols, especially catechins. The exact amount varies a lot depending on cultivation, harvest and quality.
Baby spinach mainly brings folate and vitamin K, plus smaller amounts of potassium, magnesium and iron. Because it's used raw, its fresh, mild character is well preserved.
Hulled hemp seeds provide unsaturated fats and minerals such as magnesium. They taste mild and make the texture a little more rounded.
