Ingredients

Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the kale, remove the central ribs and roughly tear the leaves.
  2. Core the apple and cut it into pieces. Roughly chop the cucumber and peel the ginger.
  3. Put the kale, apple, cucumber, ginger, lemon juice and water into a blender and blend everything finely until evenly green.
  4. Pour the juice through a fine sieve or a nut milk bag if you like it smoother. You can also drink it just as it is.
  5. Taste: if it's too sour for you, a small extra piece of apple helps.

Good to know

Sometimes you just want something fresh and clear. This green juice tastes bright, slightly tart and pleasantly zingy. Just right when you feel like something green.

Swaps

Kale → spinach (milder in flavour, also provides folate and vitamin K). Apple → pear (a little softer). Cucumber → celery (more savoury, with a little more potassium). Lemon → lime (similarly fresh, with a slightly different flavour).

Allergens

Naturally free from gluten, milk and egg; ginger and lemon can be quite intense for a sensitive stomach, so use less for children, and during pregnancy they're usually common in small kitchen amounts – if you're unsure, check with your doctor.
